This spicy fried chili topping comes from LA based Balinese street food pop-up, Bungkus Bagus. Though sambal is very common throughout Indonesia, sambal goreng is unique to Bali because it’s deep-fried and dry.
Sisters Celene and Tara Carraras are chopping and frying Thai chilies, shallots, and garlic, all completely by hand every week. It takes 50lbs of shallots, 5lbs of garlic, 6lbs of thai chilies, and 2 people 10 hours each to make 100 jars of Sambal Goreng!
